Flamiche au Maroilles (Maroilles Cheese Tart)

Flamiche au Maroilles is a beloved speciality from the north of France (Nord-Pas-de-Calais and Picardy) — a gorgeous, richly fragrant tart made with the famously pungent Maroilles cheese. Don’t let the smell intimidate you: once baked, its flavour is wonderfully complex, creamy and surprisingly mellow.

Ingredients (serves 6)

  • 1 sheet of shortcrust or puff pastry
  • 250 g Maroilles cheese (or substitute with Époisses, Munster or Livarot)
  • 3 eggs
  • 200 ml single cream
  • Salt and pepper
  • Freshly grated nutmeg

Instructions

  1. Preheat the oven to 180°C (350°F). Line a tart tin with the pastry and blind bake for 10 minutes.
  2. Remove the rind from the Maroilles and slice it into thin rounds or strips.
  3. Beat the eggs with the cream, salt, pepper and a pinch of nutmeg.
  4. Pour the cream mixture into the pastry case. Arrange the Maroilles slices on top.
  5. Bake for 25–30 minutes until the filling is just set and the cheese is golden and bubbling.
  6. Serve warm with a crisp green salad and a glass of amber beer from northern France.
