Ficelles Picardes (Ham and Mushroom Crêpes from Picardy)

Ficelles Picardes are one of the great specialities of the Picardy region in northern France — thin crêpes wrapped around mushrooms and ham, topped with cream and baked until golden and bubbling. The perfect blend of indulgence and simplicity.

Ingredients (serves 4 — 2 per person)

  • 8 thin crêpes (see our classic crêpe recipe)
  • 200 g button mushrooms, finely chopped
  • 8 thin slices of cooked ham
  • 200 ml single cream
  • 100 ml crème fraîche
  • 100 g Gruyère, grated
  • 1 shallot, finely chopped
  • 1 tbsp butter
  • Salt, pepper, nutmeg

Instructions

  1. Preheat the oven to 200°C (400°F). Butter a large gratin dish.
  2. Make the mushroom filling: melt butter in a pan and sauté the shallot until soft. Add the mushrooms and cook over high heat until all moisture has evaporated. Season well.
  3. Lay a crêpe flat. Place a slice of ham on top, then a spoonful of mushroom filling. Roll up tightly and place seam-side down in the gratin dish. Repeat for all crêpes.
  4. Mix together the single cream and crème fraîche. Season with salt, pepper and nutmeg. Pour over the rolled crêpes.
  5. Scatter the grated Gruyère generously over the top.
  6. Bake for 20 minutes until golden and bubbling.
  7. Serve immediately with a crisp green salad.
