Gratinéed Mangoes with Peanuts

Peanuts, the fruit of the humble groundnut plant native to South America and now grown across West Africa, add a wonderful crunch to this simple gratinéed mango dessert — ripe fruit caramelised under the grill and topped with crushed nuts.

Ingredients

  • 3 ripe mangoes, halved and pitted
  • 3 tbsp brown sugar
  • 50 g roasted peanuts, crushed
  • Knob of butter

Instructions

  1. Place the mango halves cut-side up in a baking dish.
  2. Sprinkle each with brown sugar and a small piece of butter.
  3. Place under a hot grill for 5-8 minutes, until bubbling and lightly caramelised.
  4. Scatter with crushed peanuts just before serving.

Serve warm, on its own or with a scoop of vanilla ice cream.
