Blue Cheese and Fig Cake

The French savoury cake, or “cake salé”, is a wonderfully simple genre — a quick-bread style loaf studded with bold ingredients. Here, tangy blue cheese and sweet figs make for a striking combination.

Ingredients

  • 150 g flour
  • 1 sachet baking powder
  • 3 eggs
  • 100 ml sunflower oil
  • 125 ml milk
  • 150 g blue cheese, cubed
  • 4 fresh or dried figs, chopped
  • 100 g grated Gruyère

Instructions

  1. Whisk the eggs with the oil and milk.
  2. Fold in the flour and baking powder until just combined.
  3. Gently stir in the blue cheese, figs and Gruyère.
  4. Pour into a greased loaf tin.
  5. Bake at 180°C (350°F) for 45 minutes, until a skewer comes out clean.

Serve in slices, warm or at room temperature, as an aperitif nibble or light starter.
