A sunset behind the palm trees of Nuku’Alofa — the capital of Tonga, one of the last Polynesian kingdoms in the Pacific. Tonga is a land of warmth, tradition and unexpected culinary discoveries, from tropical fruit milkshakes to fresh coconut desserts.

Coconut Watermelon Milkshake

I discovered this extraordinary drink while wandering through the streets of Nuku’Alofa, the capital of Tonga. I have a personal rule never to eat at local street stalls when travelling — a rule that has kept me healthy on many journeys. This time, I don’t know why I broke it. The cook smiled at me through a half-open window, and I could see him preparing dishes fresh to order. I smiled back and asked what the dish of the day was. “Turtle!” he announced proudly, flashing a brilliant smile. Turtle — a protected species. Out of curiosity, and telling myself I’d never have this experience again, I sat down. He served me my dish alongside a large glass of bright pink milkshake: “Watermelon coconut!” he said triumphantly. I have to admit — I much preferred the drink. Here is the recipe as best I can remember it.

Ingredients

  • 1 small watermelon (or half a large one)
  • Desiccated coconut
  • Coconut milk
  • Brown sugar (to taste)
  • Ice cubes or crushed ice

Instructions

  1. Remove the rind and seeds from the watermelon. Cut the flesh into chunks.
  2. Blend the watermelon with coconut milk, desiccated coconut and brown sugar to taste.
  3. Serve in tall glasses over ice cubes or crushed ice.
