Roquefort Puff Pastry – Roquefort Soufflé

Roquefort puff pastry twists are a classic aperitif snack from the Auvergne region of France — golden, flaky and intensely savoury. They come together in under 20 minutes and disappear even faster at any gathering!

Ingredients (makes about 20 twists)

  • 1 sheet of ready-made puff pastry
  • 100 g Roquefort cheese (or any blue cheese), crumbled
  • 50 g walnut pieces (optional)
  • 1 egg, beaten (for egg wash)
  • Freshly ground black pepper

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. Unroll the puff pastry on a lightly floured surface. Spread the crumbled Roquefort evenly over one half of the pastry. Scatter over the walnuts if using. Season with black pepper.
  3. Fold the other half of the pastry over the filling to enclose it, pressing lightly to seal.
  4. Cut into strips about 1.5 cm wide. Twist each strip gently a few times.
  5. Place on the baking tray. Brush with beaten egg.
  6. Bake for 12–15 minutes until puffed, golden and crispy.
  7. Cool slightly before serving — the filling will be very hot!
